Poutine

Montreal, 2026

With the French came the fries to Canada. Topping them with cheese curds and gravy, the Québecois turned them into a 'mess', or 'poutine' (as one legend has it). 
With innumerable variations, including a foie gras version, the dish is now as popular on a national level as it has always been with the local sparrow population.
